The science behind: Root vegetables.
Root vegetables are underground plant parts used as vegetables. They are generally storage organs, enlarged to store energy in the form of carbohydrates. As such they can regrow once planted.
In fact, any root can be used to regrow the plant, provided they have enough of the stem leftover. This varies by the plant itself, so either do your research or simply experiment.
